In 1531 the monks of St Hilaire ( a few kilometres from Limoux ) who were cultivating the golden grape Mauzac ( called " Blanquette ") discovered natural sparkling wine, the Real Blanquette of Limoux, the Oldest Brut in the world.
Guinot's was established in 1875 by E. Andrieu and Gédéon Guinot, his son-in- law.
The original method has been used
for 3 centuries and Blanquette de Limoux is, now, an "Appellation Contrôlée"
(label guaranteeing the quality of the wine), which is regulated extremely
in order to maintain its quality.

Production is intentionally restricted
and cultivation is exclusively limited to sun-drenched hills of high-quality
soil. The grapes are picked by hard transported in 35 kg boxes.

The wine is allowed to ferment naturally in the bottle produces natural bubbles. It is left to mature for a long time. The wine subjected to a quality control (tasting) and then will carry our name. they are placed at an angle in wooden supports and are turned a quarter of a turn each day by hand to enable the residue to settle near the cork. This residue is poured out and then, the final cork is inserted and the bottle decorated.
